Lemon and ginger jam


In this time of the year our lemon tree is full of fruits. Big, blinding yellow and flavoured lemons hung on the tree that seem to tell you "Come on, take me and make something good!"
So every winter I have lemons and lemons ready to become cakes, tarts, limoncello, limoncello cream and of course jam!
This time I tried for my jam the lemon and ginger combo. Fantastic! The two flavors really go well together. The bitter lemon fit perfectly with the spicy ginger.
The base lemon jam recipe is always the same: my aunt Anna recipe, the best! Thanks Zia Anna!


 
What you need:
8 lemons bio
g 800 sugar
1 teaspoon grated fresh ginger


Directions:
  • wash the lemons, cut them in very very thin slices and put them in a large bowl with water (enough water to cover all lemons)
  • let them stay in water for 3 day and change the water every day
  • in a large pot mix the slices with sugar and cook for about 40 minutes
  • in the middle of the cookind add the grated ginger
  • put the marmellate in sterilized glass jars, close and let them cool upsidedown

Lemon and apple simple cake

Simple things are my favourites. Just like this cake. The combo apple-lemon is a perfect mix. Enjoy it with a cup of good tea, better if is a lemon tea.
And if you are a big chef or if you are a beginner in cook and baking you will like this recipe. Simple, fast, flavoured, not fat and really delicious!

What you need:
10 tbs flour
2 tbs cornstarch
8 tbs brown sugar
g 120 butter
3 tbs milk
1 lemon (zest and juice)
2 apples
2 teaspoons baking powder

Directions:
  • cut the apples in thin slices and cover with lemon juice
  • in a bowl mix the sugar with eggs (at room temperature)
  • add the lemon zest, the butter and the two flours (mixed with the baking powder)
  • mix all together and just if you need add the milk 
  • pour in the mold and cover with the apple slices
  • put in the oven at 180°C for 40 minutes
  • if you like decore with icing sugar

Orange and choco tart


To begin a new years together.........let's tart!

If you read me you already know: tarts are my love. I have a different tart for each season, one for each month, one for each party or birthday or special holiday. With some homemade jam, with cream and fruit   or in gluten free version  (go for a visit on my "crostate" label and you'll see all them!)
Tart is the first cake thas comes on my mind evry time I decide to bake some cake. I find tarts easy to do, nice for the guests and full of happiness!
More of that it's really difficult they are not successfull. They don't flopped, they don't take down, they don't require proving.
You can call me "the tart woman".

What you need

For the base:
g 350 flour
g 100 sugar
2 eggs
g 100 butter
1 zested orange peel
a pinch of salt

For the cream:
g 250 ricotta cheese
3 tbps sugar
1 orange
1 egg
3 tbps milk
g 1 vanilla
g 80 dark chocolate

Directions:
  • on your work table (or in a bowl) put the flour. In the middle add sugar, eggs, a pinch of salt and orange zest
  • mix a little and add melted butter
  • mix all together until form a dought and let rest in the fridge for 10 minutes
  • in a bowl put the ricotta cheese and chash it very ell until have a cream
  • add the sugar, the egg, the orange juice, milk, vanilla and mix slowly
  • chop the dark choco and let's settle the tart
  • put on the base of the baking tin the 2/3 of the dought
  • put on the ricotta cream and cover with chopped choco
  • finish with a couple of orange slices if you like
  • decore with some strips had with the rest of the dought
  • cook for 35 minutes at 180°C
Fragrant and delicious!

Orange cake


This simple orange cake is exactly what you need for you breakfast.
Fragrant, tasty and soft. Like a lovely hug.
Try it with tea or milk and coffee. The day will start smailing you!


What you need:
g 350 flour
g 100 cornstarch
g 180 sugar
3 eggs
g 125 butter
1 cup of milk
1 orange (zest and juice)
g 15 baking powder
a pinch of salt

Directions:
  • in a bowl mix sugar, eggs and salt very well until they double in volume
  • add the orange (zest and juice), milk, melted butter
  • end with the two flours and the baking powder
  • pour in to the mold and cook at 180° for about 45 minutes
  • keep in the oven more 5 minute before to take it out
For a sweet wake up!

Crema compatta arancia e cioccolato

Fino a qualche anno fa era la mia amica Francesca a tenere i conti. I suoi, i miei, quelli di tutte. Così se avevo un dubbio mi rivolgevo a lei:"Fra, quanto è esattamente che mi vedo con stò stizio?" e lei, sempre impeccabilmente precisa: "Sono tre mesi, sette giorni e cinque ore".
E ogni volta che io insinuavo il minimo dubbio sul suo conteggio, lei prontamente mi ricordava il giorno esatto del calendario e l'ora dell'appuntamento. La adoravo per questo. Era fantastica. Perché a tutta la mia mancanza di romanticherie, memorie su ricorrenze, eventi, feste varie, c'era lei pronta a farmi da agenda. E le veniva così spontaneo e naturale che era diventata il nostro (di noi amiche) punto di riferimento. Così ogni volta che ci lanciavamo su pettegolezzi e avvinementi vari (molto spesso devo dire, bei tempi) se lei non era lì presente scattava sempre la telefonata preceduta da un "Dobbiamo chiedere a Francesca". E lei rispondeva sempre: precisa, puntuale, impeccabile.

Oggi che sono passati diversi anni, che a dividerci sono arrivati lavori, traslochi, convivenze e matrimoni, ecco, oggi mi sono dovuta ricordare da sola che era giunto il mio anniversario.

Lo avevo scritto sul calendario con largo anticipo ma ovviamente lo avevo rimosso.


E ogni volta devo fare uno sforzo enorme per calcolare non dico le ore e i giorni (non arriverei mai a tanto) ma almeno gli anni........e non ridete, dico davvero. E non perché non tenga alla persona che mi stà accanto ma proprio perché sono negata per questo tipo di festeggiamenti.


Sono certa che a tutt'oggi Francesca una imperdonabile dimenticanza del genere non l'avrebbe mai avuta.

E comunque, all'ultimo minuto, mi sono inventata un mini dessert giusto giusto per me e per il mio caro tesoruccio. E, sia chiaro, abbiamo festeggiato. Ma che c'entra, noi festeggiamo ogni giorno......


PS: Ma voi ce l'avete un' "amicafrancesca"?


Ingredienti per due persone:

1 bustina di preprato per Crema Pasticcera Molino Chiavazza
250 ml di latte
1 cucchiaio abbondante di cacao amaro di ottima qualità
1 arancia non trattata
zucchero a velo per guarnire


Mettete in una ciotola a bordi alti il preparato in busta, aggiungete il cacao, la buccia grattugiata dell'arancia e montate la crema. Travasatela in uno stampo che vi piace e lasciatel ain frigo per un'oretta circa. Sformatela, guarnitela con delle fette di arancia e spolveratela di zucchero a velo.

Prendete ora un cucchiaino e ............. gustatevela!

Torta di ananas e arancia

Chi mi legge sà che periodicamente devo inventarmi dei dolci senza uova per la mia sorellina intollerante.
E cerco di proporgliene sempre di nuovi e diversi o di rielaborare alcuni che conosco nella versione "senza uova".
Alla fine ne ho così tante che ho aperto proprio una sezione nel mio blog di "dolci senza uova" in modo che se qualcuno ha lo stesso problema può avere dei punti di riferimento per portare a tavola ricette comunque deliziose.
Come appunto é questa torta. Semplicissima, soffice, gustosa.
E anche se le uova le mangiate, provatela, ne vale la pena!

Ingredienti:

g 200 farina 00
g 80 di fecola di patate
g 180 zucchero
1 bicchiere di latte (circa 120 ml)
1 bicchiere di olio di semi (io girasole)
la scorza e il succo di un'arancia non trattata
1 barattolo di ananas al naturale
1 bustina di lievito
zucchero a velo per guarnire

Mescolate insieme tutti gli ingredienti secchi, compresa la buccia d'arancia. Unite poco a poco quelli liquidi ed amalgamate il tutto fino a che il composto non prenda una buona consistenza (non torppo liquida). Aggiungete la metà delle fette di ananas tagliate a tocchetti, girate ancora in modo che si distribuiscano in maniera omogenea e travasate in uno stampo da forno. Guarnite la superficie con le rimanenti fette di ananas e la fetta d'arancia.

Infornate a 180° per 35 minuti circa.

Una volta raffreddato, cospargete il dolce di zucchero a velo.

Ottima da servire tiepida con il tè del pomeriggio.

Arance caramellate al cardamomo

La semplicità vince. L'ho sempre detto: le cose troppo pasticciate e arzigogolate non fanno proprio per me. Ho bisogno di chiarezza, devo capire bene. Sempre. Questo vale nella mia vita come nella mia cucina. Le cose che ingoio o che mi vogliono far ingoiare devono essere ben chiare ai miei occhi e al mio cervello. Altrimenti non se ne fa nulla.
Prendete questo dessert ad esempio. Lo potete mangiare già con gli occhi. E' chiaro cosa vi propongo. Non ci sono trucchi, non posono esserci.

Ottimo come fine pasto in questa primavera che faticosamente stà arrivando......

Ingredienti per due persone:
2 arance tarocco belle grandi
g 100 di zucchero di canna
2 bacche di cardamomo

In un tegame fate sciogliere a fuoco basso lo zucchero con il cardamomo e 1/2 bicchierino da caffè di acqua fredda. Appena si scioglie lo zucchero alzate un pò la fiamma e lasciate bollire per circa 10 minuti, fino a che si formi un caramello chiaro. Togliete il tegame dal fuoco e mettetelo in una bacinella con acqua fredda in modo da far fermare la cottura. Aggiungete subito un altro 1/2 bicchieino di acqua calda e girate per bene. Spellate le arance a vivo, tagliatele a fette e disponetele su di una pirofila. Cospargete di caramello e lasciate raffreddare.

Le arance prenderanno il dolce del caramello e i profumo del cardamomo.

Una piccola delizia, provatela!
